The nutrients in Spinach include folate, vitamin C, niacin, riboflavin, and potassium. When you eat spinach that has been heated, you will absorb higher levels of vitamins A and E, protein, fiber, zinc, thiamin, calcium, and iron and cooking spinach dissolves oxalic acid and reduces the goitrogenic activity can cause goiters in people with thyroid conditions, however, with everything you eat, moderation is the key. You really can have too much of a good thing!

For breakfast this morning, I tossed spinach in a ceramic pan over medium heat until wilted. I tossed in some pine nuts and a little Balsamic vinegar. You know I love my farm fresh eggs and un-cured turkey bacon! Very filling and really yummy!
